I have had the incredibly good fortune to spend my last coupe of winters in New Mexico. It’s been a long time since I lived in the snow and experienced all of it’s beauty and fun. But with the decrease in sun exposure on my body and a more inside lifestyle I too have become more prone to colds and flu’s than in the past. This year I got sick and tired of being sick and tired and having to rely on a basket full of natural remedies so I decided to research a food treatment that is delicious and effective. And I found one that I would like to share . I make this soup about once every other week and everyone in the house (even my 2 year old) drinks at least a couple of spoonfuls if not a large shot glass full (up to 4oz). So here is my recipe, I hope you try it and love it but if it’s not perfect please modify it to work for your pallet and share your new recipe with me.
Step 1.
1 large sliced yellow onion sauteed in 2 tbsp of grass fed butter until clear
Step 2.
2 bulbs of roasted garlic 1 bulb of raw garlic 3 inches fresh ginger 2 inches of turmeric 1 1/2 teaspoons chopped fresh thyme 1/2 cup coconut milk 3 1/2 cups organic broth 2 tablespoons of yellow miso paste
Step 3.
Add sea salt and cracked pepper to taste
1/2 a lemon juiced
A sprinkle of chili powder (your choice)
Sauté onion in butter until clear, then add broth and coconut milk, add all other ingredients, let come to a boil and then simer for 30 min. Blend (it works better in a blender than a food processor) until creamy, then add step 3 ingredients and simmer for another 20 min or so and serve.
